Hello! This is a very quick vegetarian, simple and non-spicy recipe. It is really really good. You are going to love this Butter Paneer!
Add to your blender and use a high setting for one minute on the following ingredients:
- I big can of tomatoes, either crushed, diced or whole. You can use fresh tomatoes as well, around 5-6 medium-size ones.
- 4 cloves
- ½ cinnamon stick
- 4 cloves of garlic
- 1 small piece of ginger, like the size of your thumb
- 3 very small red onions, or yellow onions
- 40 almonds
Add to your instant pot the rest of the ingredients, as follows:
- 2 cups of water or vegetable broth. Check out my vegetable broth recipe here.
- 2 blocks of cubed paneer (each block around 350gr)
- 3 bay leafs
- 1 small block of butter. If you don’t have butter, add 4-5 heaping scoops of coconut oil
- 1 teaspoon of sugar
- 1 tablespoon of garam masala
- Salt to taste
- Any raw or frozen vegetable. I like adding 4 cups of frozen green beans or 2 crowns of raw broccoli
- Add the blender mix
Stir all the ingredients, close your instant pot (don’t forget to seal it), select pressure cook for 4 minutes and ta-da! You’ll have a Butter Paneer dinner for two for a few days! Enjoy with a side of white rice.
